I love potatoes and I love french fries. I have no idea why I didn’t think that I would immediately fall in love with the air fryer because, really, even though it cooks vegetables and meats perfectly (just take a look at this broccoli!) where it really, REALLY shines, is potatoes!
Sometimes you need potatoes and you need them fast. You could roast them in the oven but I find that it kind of sort of takes a long time? The next time you need potatoes in a flash, try an air fryer! Thick cut wedges cook in no time and they’re fluffy on the inside and crispy on the outside.
Bonus: if you want them extra crispy, double air fry them, it makes them ultra crispy!
Crispy Air Fryer Parmesan and Thyme Roasted Wedge Fries
- 2 russet potatoes, scrubbed and cut into wedges
- 1 tablespoon oil or cooking spray
- salt and freshly ground pepper
- 1-2 sprigs of thyme, leaves only
- freshly grated parmesan, as desired
Toss the potatoes with oil or cooking spray, salt, and ground pepper.
Place the potatoes in the air fryer basket.
Turn the air fryer on at 400°F for 10 minutes. Shake and flip the potatoes, then set it again for 10 minutes at 400°F. At this point the potatoes should be crisp and tender.
Remove from the basket, toss with thyme and parmesan, if using, and enjoy!
